Freshen Up A Salad With A New Dressing!

Spring is the best time of the year to freshen up a salad bar with a few new salad dressings!

Give these a try and give your salad a different taste!

Fresh Herb Vinaigrette
Yield: about 2 quarts
Ingredients
2 cups red wine vinegar
1/2 cup Dijon mustard
1 teaspoon sea salt
1 tablespoon fresh cracked black pepper
4 cups olive oil
1/2 cup loosely packed fresh dill, finely chopped
1/2 cup loosely packed fresh parsley, finely chopped
1/2 cup loosely packed fresh tarragon, finely chopped
1 tablespoon fresh garlic chopped

Directions
– In a mixing bowl, whisk together vinegar, mustard, salt and pepper.
– With mixer running on a low speed, add olive oil in a steady stream.
– Stop mixer and whisk in herbs and garlic by hand.
– Refrigerate for 1 hour before serving.

Citrus Chive Dressing
Yield: about 2 quarts
Ingredients
2 cups apple cider vinegar
2 oranges, zest and juice
2 lemons, zest and juice
1 grapefruit, zest and juice
1 tablespoon sugar
1/2 cup Dijon mustard
1/4 cup finely chopped chives
1 teaspoon salt
1 tablespoon cracked black pepper
4 cups vegetable oil

Directions
– In a mixing bowl, whisk together all ingredients except the oil.
– With the mixer running on low, add oil in a steady stream.
– Serve chilled.
