Ingredients
7 pounds sweet potatoes
Water
3 cups butter
6 cups sugar
2 cups milk
1 cup apple cider
12 eggs
1/4 cup vanilla extract
1 teaspoon salt
1 tablespoon ground nutmeg
1 tablespoon ground cinnamon
1 tablespoon ground clove
1 tablespoon ground allspice
6 unbaked pie crust in pie tins
Directions
1. Boil sweet potatoes, skin on, whole in water on the stove for 45 minutes.
2. Drain and rinse under cold water till able to handle. Remove skin.
3. Break apart sweet potatoes in a mixing bowl, add butter and mix well.
4. Add sugar, milk, cider, eggs, vanilla, salt and spices. Mix until smooth.
5. Divide between pie shells.
6. Bake at 350 degrees for 60 minutes. Pie will “deflate” as it cools.
