Looking for a holiday recipe to add to your meal? How about Citrus Cranberry Relish?
This recipe makes ALOT; about 48 ounces. Here you go:
4 pounds Fresh Cranberries
1/2 cup Orange Zest – finely chopped
1/4 cup Lemon Zest – finely chopped
3 cups Orange – diced small
1 cup sugar
2 Tablespoons fresh thyme – finely chopped
Rinse and dry cranberries then pulse them in a food processor. To a medium bowl add cranberries, zest, diced oranges, sugar and thyme and mix well. Wrap bowl and let chill in refrigerator for 45 minutes then serve garnished with orange slices and a few whole cranberries.
