It’s Wing Season!

With the sports season heating up as baseball season is right around the corner, the NBA and NHL are headed towards a playoff push, and NCAA Tournament and conference tournaments start soon, it is officially wing season!

If you want to incorporate chicken wings into your perfect meal, here are a few recipes to get you started!

Here are four sauces for your next wing night:

Classic Buffalo Wing Sauce
Makes 3 cups (enough for 100 wings)

Ingredients
2 cups Frank’s Red Hot sauce
1 cup butter (cold)
1 tablespoon Worcestershire sauce
1 teaspoon ground cayenne pepper

Directions
Place all ingredients in a pot, heat over medium heat till bubbles start to form in the pot. Begin to whisk, pull off heat so it forms a smooth, unbroken sauce. Serve wings tossed in sauce with blue cheese dressing and celery sticks on the side.

Maple Bacon Wing Sauce
Makes 3 cups (enough for 100 wings)

Ingredients
2 cups maple syrup
½ cup cider vinegar
16 strips of smoked bacon, fully cooked, reserve the drippings

Directions
Cook bacon and reserve the drippings. Allow to mostly cool, then stir in vinegar and syrup. Add crumbled bacon. Toss with wings.

Teriyaki Orange Wing Sauce
Makes 3 cups (enough for 100 wings)

Ingredients
2 cups orange juice
1 cup teriyaki sauce
¼ cup brown sugar
¼ cup orange zest
¼ cup sesame seeds
¼ cup white or rice vinegar

Directions
Place all ingredients in a pot, heat over medium heat and reduce by one quarter, sauce should be thick and sticky. Toss with wings. Serve with fried wonton strips.

Honey Mustard Pepper Wing Sauce
Makes 3 cups (enough for 100 wings)

Ingredients
1 ½ cups Dijon mustard
1 ½ cups honey
½ cup melted butter
2 tablespoons cracked black pepper

Directions
Combine all ingredients in a pan and whisk together over medium heat. Warm till it is just started to bubble. Toss with wings. Serve with a variety of pickled vegetables.
